Shhhh....don't tell my husband!
Today is his birthday, and he at his family's farm combining {hopefully} after a series of frustrating breakdowns since the beginning of harvest.
The kids and I brought him a big container of his favourite peanut butter cookies over the weekend, and he was thrilled. But, I feel a twinge of guilt because this gift was so effortless.
These are adapted from a recipe I found several years ago in the Busy Woman's Cookbook. I added the oats and substituted the coconut sugar, which I am in love with as a substitute for white sugar.
Easy-Peasy Peanut Butter Cookies
1 cup peanut butter
1 cup coconut sugar (or regular sugar)
1 egg
1 teaspoon vanilla
1/2 cup rolled oats
1. Combine peanut butter and sugar.
2. Stir in egg and vanilla.
3. Mix in oats.
4. Shape into 1-inch balls and put onto ungreased cookie sheets.
5. Press with a fork to flatten.
6. Bake at 350 degrees for 12 minutes.
